Date Night !

It's Fridayyyy ! Yipeeeee !

I have a dinner date tonight .... and what's really great about it is that my date's on this journey too. Somehow it is easier for men I suppose ! He has lost so much weight in these few weeks and it really shows. He is super motivated... only fruit for lunch and light dinner... and he swims 3o laps and walks for an hour on top of that ! So inspiring !

I have this pile of papers that I have to finish grading by end of today. Bleh !

I brought 3 lunchboxes to school today.... hardly sounds like someone on a diet, right ? Heheh... well here's what was in them

1. 2 small pcs of baked chicken fillet, and a small sweet potato , baked with spices
2. Celery sticks , snow peas and tomatoes with 1 Tab of chives and garlic dip, and a dash and hot and sour sauce
3. 3 slices of pineapple

Now is that bad?

I love cooking and preparing food so I guess this new change of lifestyle might just work for me. But I am also someone with a very short attention span .... for everything ! My biggest fear is that I will go off track ! Aaaaaaah !

I baked a cake 2 nights ago (I am having 2 mini slices now) .... trial and error ingredients ... here's what I used :

1 tab reduced fat spread
1 eggwhite
1 orange - rind and juice
1 carrot - grated
1 tsp maple syrup
ground ginger
ground cinnamon
1/4 cup wholemeal flour
baking powder
salt

The reason why I made it in such a small quantity, is because I know no one else at home would appreciate it. It's sugar free and sure doesnt taste anything like a dream cake. But the important thing is ... I like it ! I am having 2 mini slices with 1/2 a cube of dark choc (70% cacao , 2% sugar)... I've broken the cube into tiny bits and sprinkled it on the cake... so i get one little bit with every mouth full. I am having this with black coffee.... no milk and no sugar. My little treat ! Will upload pics of this soon .... and I will definitely make it again since I like it. But this time gonna try to reduce the fat spread and see what happens.

I am thinking of baking some oatmeal-apple thingie this weekend. Am dreaming up the recipe.... love modifying recipes !

I will not eliminate anything I like from this new lifestyle of mine... but I will eat everything in moderation. Portion control !

HAve finished grading the pile ! Yahooo ! Still have one assignment of my own due... and not started on it. The nerve. It's term break now and I miss my students. Sigh.

Hope tonight will be nice with my date .. let's call him M. Sometimes I think I just cannot enjoy the moment and keep thinking too much about everything.

He is supposed to get us some steamed chicken for dinner, and I am getting the salad ... here is what I intend to throw in the salad :

Lettuce
Tomato
Celery
Sprouts
Dried Tomatoes
Dried Cranberries
Almonds

Meeting my galfriend for dinner tomorrow.... it's my vegetarian day. I do vegetarian 4 times a week. Mon to Wed and on Saturdays. The vegetarian trap is that due to the lack of protein , vegetarians tend to consume a lot of carbohydrates. I will not fall into that trap , esp not when there is an ample supply of vegetables out there, which I am starting to love.

I used to be super anti-vegetables... to the point that I would even remove the lettuce from my burger ! So, a huge change indeed !
